Happy Junk Food Day!

At least in our classroom it was!  We had to celebrate Valentine’s today since we won’t be in school on true Valentine’s Day.  That meant that I ate many cookies and chocolates along the way — sorry I didn’t get pictures of all of it — it was truly a mad dash at the end of the day during our valentine exchange and celebration!

I almost ate oats this morning, but then I saw the mushrooms sitting in the fridge, longing to be a part of someone’s life….I said to them, “mushrooms, I will make your day!”  Breakfast was an egg white burrito!  It has mushrooms, spinach, tomatoes, and parmesan cheese.

Another green machine and clem!  At this point in the day I had held it together.  I had a chance to eat cupcakes (I didn’t), candy (I didn’t) — I was feeling great!

Lunch was seriously great!  Leftover spaghetti squash with feta, onions, a few olives, and fresh tomatoes.  GOSH IT’S GOOD!

OOOOkay, then I started eating cookies — 4 mini cookies with thick, thick, pink frosting.  You know the kind you get at Wal Mart — judge all you like, I ate them.  The thing is, pink icing is the worst flavor of frosting there is — it’s sort of bitter and sort of gross.  Go me.

I had packed a delicious snack of sliced apples and cinnamon — instead I ate this:

Chocolate + Strawberry = Perfection

We ALWAYS have chinese for Friday dinner.  Not tonight.  Kellen wasn’t hungry.  So I had to fend for myself.  I could have had more squash, I could have had Annie’s Tomato Soup, I could have had oats.  But I had frozen dumplings, which I burned.

Soooo, here’s what I’ve learned:  Sometimes you eat poorly.  It’s okay.  You’ll pick yourself up, dust yourself off, and do better the next day.

Happy Friday!

  1. Your spaghetti squash with feta, onions, and tomatoes looks so scrumptious! I’ll have to try it myself one day!
