I can’t believe it’s been over a week since I have taken any food pictures, shared recipes, or written to you all about eating!
Here’s what I learned:
1.I don’t eat super well when I’m not blogging.
2.I am capable of eating an entire bag of mini oreos by myself.
3.Chex Mix leaves a gross film in my mouth. Fruits and veggies don’t.
GET TO THE FOOD, TUMS!
B-Fast! Oats! duh! These had peaches, chia seeds, coconut flakes, wheat germ, almond butter, pumpkin butter, and chopped almonds — I have trouble editing the ingredients I add to my oats.
So good. I roasted up some butternut squash the other night. I had cinnamon on it. It needed something more. I think in the future I will commit to either sweet or savory. I’ll add either cinnamon with brown sugar or some rosemary and pepper — or something — the cinnamon alone didn’t quite cut it.
BUT with bbq sauce this squash is B.A.! (‘Twas my lunch!)
There was no first snack and my second snack was classic — a banana with peanut butter — I had to go to a PD meeting and totally forgot to take a picture.
Dinner was Inside Out Lasagna! Here’s how to make it:
1. boil up some whole wheat pasta in your pasta pot.
2. Add an onion and some garlic to your pan and cook ’em up. After a couple minutes add some mushrooms.
3. Add some color to your pan with tomatoes, spinach, crushed red pepper, basil, and some kalamata olives — because they are great.
5. put the pan stuff on the pasta and add some ricotta cheese. Yum!
There was waaaay too much of this for me to finish. Hello tomorrow’s lunch!
