This was basically the same day as Monday. Conferences until 7, etc. Only, there were no more cupcakes in the workroom. It started with the last of the buckwheat pancakes. Mashed banana, walnuts, and strawberry preserves here I come!
Green Machine Naked Juice with celery, peanut butter, pumpkin seeds, and crasins for first snack. Also, I need better/more snack ideas? What are all you great bloggers doing for snack? I always read your blogs but then forget all your great ideas whilst making snack in the morning!
You’ve seen this lunch before. Sorry for the massive amounts of repeat offenders in this post. But if you could taste this lunch, you would want it everyday too! Orzo, feta cheese, fire-roasted tomatoes, carrots, and three huge handfulls of spinach doused in olive oil and balsamic vinegar. YES.
2nd snack was delicious roasted pine nut hummus with carrot sticks.
I really needed about 4 snacks today. I ate this clem at 4 and I ate another one at five. Hello pith! You keep me healthy and happy 🙂 I was starved when I got home!
Stuffed peppers are in the oven right now! I can hear them sizzling! I’m excited to try them! I’ll be back with the recipe later 🙂
To preface, I didn’t really like these stuffed peppers, but Kellen did. It’s half a pepper (duh) stuffed with ground beef, brown rice, cilantro, tomatoes, cumin, oregano,garlic, onions and an egg white. Then you wrap it in foil and bake at 400 for 30 minutes. Try them if you want…but I wouldn’t.
