Making Crab Cakes Is Sexy

Or so I’ve been told.  What in the world did I have for breakfast yesterday…cereal?

I was thirsty in the morning (way to stay hydrated, Whit!) and thirsty mornings = cereal.  I love bran flakes.

My lunch was a piece of granma’s bread with Earth Balance — a lot of Earth Balance.  I know, I know…a piece of toast? That does not a balanced lunch make!  Well, I ate like a rhinoceros Tuesday and it left me only peckish yesterday.  Toast was perfection!

Dinner was awesome! I made crab cakes.  They are super easy!

Mix the following in a big bowl:

  • Thing of crab meat
  • two eggs (you could use one…but two worked better as binding)
  • 1 Tbs of dijon mustard
  • half a red bell pepper
  • 2 Tbs Old Bay (god I love old bay — I’d put it on anything!)

Form into cakes and fry it up in a non-stick pan.  DONE!

With it I made corn and nuked the last of the spinach/potato mash.

Man this was good! Make it!
